2 cups cornmeal
1 teaspoon salt
2 cups whole milk
4 catfish fillets
vegetable oil for frying
Directions:
To prepare the catfish, mix cornmeal and salt in a shallow dish.
Dip catfish in the milk, then dredge in the cornmeal mixture.
Fill a deep fryer half full with oil and heat to 350F on a deepfrying thermometer.
Add catfish, 2 at the time, and fry 2 to 3 minutes on each side.
Or until golden brown and fish flakes easily with a fork.
Drain on paper towels, and serve immediately.
A great compliment to this dish is the lemon pie recipe below.
3/4 cups sugar
3 tablespoons flour
1 grated lemon rind
1/8 teaspoon salt
1 cup milk
3 tablespoons lemon juice
1 cup butter
3 eggs
1 baked pastry shell
Meringue Ingredients:
1/2 teaspoon vanilla flavoring
1/4 teaspoon cream of tartar
3 egg whites
6 tablespoons sugar
Directions for pie filling:
Mix sugar, flour, salt, eggs, lemon juice and rind, and butter.
Add milk, stirring constantly.
Cook in double boiler until thick.
Cool slightly, and pour into a baked pastry shell.
Directions for the meringue:
Preheat oven to 500F.
Beat egg whites and cream of tartar until foamy.
Beat in sugar, 1 teaspoon at a time.
Beat in vanilla.
Continue to beat until stiff, do not under beat.
Pour over pie and bake 3 to 5 minutes or until top is light brown.
Cool slightly or chill in refrigerator and serve.
